Marriott International says Singapore is one of Asia Pacific’s fastest-paced fine-dining markets, with 85% of restaurants surveyed reporting an average dining experience of 1.5 hours.

The finding forms part of Marriott’s Future of Food 2027 report, launched from Singapore and covering food and beverage trends across Asia Pacific excluding China.

Across the region, Marriott said 58% of surveyed properties reported average fine-dining experiences lasting between 1.5 and two hours, pointing to a shift away from longer tasting-menu formats.

The report also found growing demand for more informal and locally rooted dining. Marriott said 95% of surveyed properties identified demand for authentic local signature dishes as the biggest trend in their market, while nearly half reported increased demand for casual venues including lounges, bars and outdoor settings.

Petr Raba, Vice President of Food & Beverage, Marriott International, Asia Pacific excluding China, said hotels were moving towards smaller and more locally focused dining concepts. “Across Asia Pacific, we’re witnessing a shift toward intimate, locally-rooted experiences, where smaller, intentional spaces replace traditional formal dining models.”

Marriott said four in five properties introduced new local ingredients over the past year, while 97% now serve dishes associated with health and longevity.

The company also reported growing use of artificial intelligence across restaurant and bar operations, alongside increased demand for low- and no-alcohol drinks. Some 42% of restaurants and bars surveyed across Asia Pacific excluding China reported increased sales of non-alcoholic beverages.
